



The western Sicilian coast is exposed to the dry winds of Africa which, helped by the hot summer sun, produces, through natural evaporation, a sea salt rich in magnesium and potassium. The salt is harvested twice in the summer from saltpans at the ancient fishing port of Trapani, an historic area where salt production can be traced back to 800 BC.
