











Le Paludier is the name given to the French harvesters of salt in the 5th Century when monks of Landevennec Abbey first studied the wind, sun and tide while planning the salt works which can still be seen in Brittany today. A natural evaporation process is followed by a mechanical one and a careful grinding of the final product for ease of culinary use.
