Scotland's west coast was carved by glaciers that flowed through steep valleys, scouring deep basins as they went. The result was the formation of many deep sea lochs including Loch Erisort in the Isle of Lewis. Here, in the most northernly port of the Scottish Outer Hebrides, clear sea water is captured and gently warmed to produce this classical salt.
